DRYING BEETS


  Cook  beets and  allow  them  to cool.  Peel and  cut into
shoestring  strips 1/8 inch thick.  No further blanching  is
required. Dry 4 to 6 hours in a dehydrator or 6 to 10  hours
in an oven.
