STORING ENDIVE
Endive is usually not stored but can be held for up to
three weeks in the refrigerator. Gather the leaves together
and tie them with a rubber band. Put the tied head in a
plastic bag and place it in the refrigerator.
Endive can also be stored like celery, upright, close
together, with moist sand around the roots and the outer
leaves tied around the heads. It will last in very moist,
32 degree Fahrenheit conditions like this for two to three
weeks.
