FREEZING GREEN PEAS


  Select well-filled flexible pods with tender seeds.  Shell
peas.  Do not use immature or tough peas.                   

  Shell  peas.   Water blanch 2 minutes.  Cool  promptly  in
cold water and drain well.                                  

  Pack  peas  into containers, leaving  1/2-inch  headspace.
Seal, label and freeze.
