FREEZING CITRUS
Grapefruit, oranges
Sections or slices. Select firm tree-ripened fruit heavy
for its size and free from soft spots. Wash and peel.
Divide fruit into sections, removing all membranes and
seeds. Slice oranges if desired. For grapefruit with many
seeds, cut fruit in half, remove seeds; cut or scoop out
sections. Pack fruit into containers. Cover with cold 40-
percent syrup (1 cup water or juice to 2/3 cup sugar) made
with excess fruit juice and water if needed. For better
quality, add 1/2 teaspoon ascorbic acid to a quart of
syrup. Leave 1/2 inch headspace. Seal, label and freeze.
