PRE-DRYING TREATMENT, VEGETABLE


  Select   vegetables carefully for drying. If they are  not
fresh  or in  prime condition  for  cooking,  they   are not
suitable  for  drying.   Vegetables should  be  washed   and
prepared on the same day they are harvested.
