PEANUTS-TOASTING


     When oven roasting  in the shell, keep the oven  at 300
degrees Fahrenheit and roast  30 to 45 minutes,  or 20 to 30
minutes  if shelled.   Turn  constantly to avoid  scorching.
Check  for doneness by removing skins.   The inner skins are
high  in thiamin and pleasantly flavored.  Steam processing,
used  commercially  for roasting peanuts in the shell, gives
superior results.
