Artichokes are quite perishable and should be used as
soon as possible after purchase. However, they will hold
up to a week without breaking down if stored in the
refrigerator.
When to buy: Available year-round but at peak in
March, April and May.
What to look for: Firm, compact vegetables with
attractive olive-green coloring that are heavy in relation
to their size.
How to store: Refrigerate immediately after purchase.
