FREEZING SNOW PEAS AND SUGAR SNAP PEAS


     Also called sugar peas,  edible-podded peas, or Chinese
pea  pods--should  be  harvested when peas are  just  barely
visible in the pods.  To freeze, blanch in boiling water for
2  minutes.   Cool promptly in cold water and  drain.   Pack
into  containers,  leaving 1/2 inch headspace.  Seal,  label
and freeze.                                                 

     Like snow peas, sugar snap peas have edible pods. Sugar
snap peas should be picked when the peas are large and fully
mature  and  the  pods are round and full size (2 1/2  to  3
inches long).   To freeze, blanch in boiling water for 2 1/2
to 3 minutes.   Cool promptly in cold water and drain.  Pack
into  containers,  leaving 1/2 inch  headspace.  Seal, label
and freeze.
