BITTER PICKLES
Some varieties of cucumbers are more bitter than
others. Cucumbers should be soaked in a salt brine for a
few hours or overnight before pickling. This short brining
procedure helps to draw out bitter juices from the
cucumbers. Alum can also cause pickles to be bitter.
